Almost every Toor Dal in the market has been polished - a process that buffs the outer skin for uniform appearance, adds mineral or castor oil for sheen, and strips some of the dal's natural nutrition in the process.

Ours has not been polished. It has not been treated. It is processed through an ash-roasting method that is older than any modern food factory.

The ash-roasting process - roasting lentils over dried cow dung ash, cooling, sieving, and milling - is not a marketing story. It is a traditional technique that preserves digestibility, aroma, and honest dal flavour. One that mass processors abandoned because scale does not allow patience.
