Our Philosophy

 

In Indian tradition, food is considered sacred. In ancient rituals (यज्ञ), food was offered as havi (हवि) — a sacred offering to the fire (अग्नी). On the other hand, the digestive fire within the body (जठराग्नी) is also revered as a divine form of Agni. In modern times, people have begun to understand the profound physical and mental impact of the food they consume. This has led to the revival of the belief "यथा अन्नं तथा मनः" — As is the food, so is the mind.

India’s approach to the sanctity of food encompasses the entire value chain — from farm to plate. Rooted in Indian philosophy is the deep respect for an environmentally harmonious lifestyle. To live in tune with nature, ancient Indian wisdom introduced the concept of Rutu — the seasons — encouraging individuals to align their daily routines and diets with the rhythms of nature.

This seasonal alignment, known as Rutucharya (ऋतुचर्या), includes not only diet but also lifestyle, attire, rest, and behavior. Even in spiritual offerings, Indians emphasized seasonality — offering flowers and fruits that were timely and naturally available, with the expression:
"
ऋतुकालोद्भव पुष्पं-फलं समर्पयामि " — I offer this seasonal flower or fruit to the divine.

Our culinary tradition recognizes Navarasa (
नवरस) — the nine essential tastes — in food. These are not just flavors but also sources of vital nutrients. Nature dictates which tastes and nutritional elements are dominant or beneficial in each season.
